We'll start out making the dough. I'll teach you about the importance of time and temperature, about different yeasts and how to make biga or poolish (and even what those words are and why you will want to care). Once the dough is out of the spiral mixer we'll practice shaping it into balls. Next we'll practice what is probably the hardest yet funnest part of all.... opening up a Neapolitan pizza ball. You'll learn to massage the dough, so the air moves outward toward the edge - otherwise known as the cornicione. You'll learn to dress the pizza and then then place it into the wood-fired oven. There's no turning back now. In 90 seconds your pizza will be finished. We'll practice this over and over using the same techniques I learned from a world champion. This will be the best class ever because you get to eat your homework!
Other things to note
This is primarily an outdoor experience. If the weather forecast is predicting rain 3 days in advance of the event then it may be prudent to cancel. Everyone booked will be brought in on the decision whether to cancel, reschedule or forge on. We asked that everyone wear their mask.

I'm a retired television cameraman who fell in love with making pizza after I filmed a History Channel documentary on everything there is to know about pizza. From there I sought out one of the finest pizzaiolos in America, and traveled to NYC to become his student, and learn one on one the craftsmanship of making true Neapolitan pizzas. Having now made thousands of pizzas and spent a career delivering show-and-tell through television, I believe I can teach anyone how to make an exceptional pizza, and have a lot of fun while doing so.

This experience was amazing! John and Deb are such incredible hosts. Not only is this experience so fun and unique, but their place is beautiful. They walk you through everything you need to know, different types of pizzas and how to make/bake/fry them all. They're very patient and attentive and make your time with them so enjoyable. Come hungry because pizza will be aplenty! Would do this many times over!

This was one of the best experiences I have had. John and his wife were truly inviting. He had so much knowledge- but also allowed us to focus on having fu - and he followed up with emails on the recipes etc- so we didn’t have to write everything down during the experience. He was great at catering to everyone’s needs.

John and Deb: you were pizza rockstars and have a passion for delivering the best pizzas my family and I have ever tasted. Thank you for including my entire family in this experience and accommodated the little ones with grace. My partner and I had a great time making pizza with John and Deb! They are both caring and kind, and made everyone feel welcome at their incredibly beautiful home. Pizza making was a lot of fun, with John providing skills and tips, Deb keeping things organized, and both running humorous and charming commentary. You will get to make and eat some of the best pizza of your life here - highly recommended!

Took up this airbnb experience as a Valentines Day Special and what a blast we had . John and Deb are the loveliest hosts and John’s knowledge of Pizza is astounding. We learnt so much about pizza making right from the dough, working the dough, varieties of toppings and baking in woodfire oven. Highly recommend this experience for the great food and excellent conversations.

This was an absolutely wonderful experience. John not only is an expert when it comes to pizza, he has a passion for it that comes across in his teaching. All 8 of us had hands-on experience from dough making to getting the pizza into and out of the oven. Everyone completely enjoyed the course and would highly recommend it. A special shout out to John's sous chef, Deb, who helped make this a great event. It is well worth the money spent.
